Abstract The present study aimed to determine the effect of refractance window (RW) drying and compare it with sun for various physicochemical properties walnut kernels. Physical such as moisture content, texture, color analysis, water activity were analyzed results found be better than drying. ΔE value kernels was lowest (4.36) at 70 °C texture profile those obtained by total phenolic antioxidant RW-dried product significantly higher sun-dried sample. TPC RW dried sample 90 maximum 2710 ± 2.75 mg GAE/100 g. IC 50 kernel (4.12 0.45 µg/mL) °C. LOX all samples lower in case (0.065 0.015 µkat) CHNO(S) test depicted lipid oxidation samples.
